Chocolate - Peanut Butter Layered Cupcakes!

That is why I love Pinterest. One can always find something   to make. And I found this recipe for cupcakes. So one day, I got the chance to bake and here is the procedure.

In  a large bowl mix  1 and 1/2 cup flour, 1/3 cup baking cocoa, 1 cup brown sugar, 1 tsp baking soda and 1/4 tsp salt.


Then add 1/3 cup oil, 1 cup water, 1 tablespoon vinegar, and 1/2 tsp vanilla to flour mixture, stirring until smooth.


Like this...do not overmix


In another bowl, beat 1 egg, 1 package ( 8 oz) cream cheese, softened, 3/4 cup peanut butter, 1/3 cup granulated sugar with electric mixer until smooth


Then add 1/3 cup powdered sugar until beat until creamy


Spoon 1 level tablespoon chocolate batter into each cup;


 spread peanut butter filling on top, at least try:) 


Repeat layers and sprinkle with cholate chips


Bake 25 to 30 minutes (175 degrees )


Now, the finished cupcakes. My daughter said it was good. I served these cupcakes when we visited the elderly last Sunday. And guess what? My sister baked cupcakes too for the elderly, so it was a cupcakes day for them.

  2. beat 1 egg? bakit parang dalawa yung egg na nilagay mo. use muffin tray next time para ok ang shape ng cupcake. =)

  4. Hi Joy, These cupcakes look very tempting. I would try them out, but am afraid if I sampled one, I would start craving more. You are so thoughtful to bake them for your trip to see the elderly. I am sure between you and your sister, they had a lovely day, like a party. Bless your kind hearts. Thank you for the lovely comments on my summer hiatus with my blog.
